The lightness and crispiness of our dough didn't just happen. We are passionate about authenticity and we made it our mission to preserve tradition by working only with the highest quality products.
We use a special mixture of locally selected strong wheat flour, with a high ratio of protein and no sugar added.
Just like our homeland wants it, our dough has a lot of water and only a few grams of yeast. Why?
We let it rest and rise for 72 hours... Then the magic happens!
This authentic Italian technique guarantees a tasty, high-quality dough which is also
light and highly digestible.
